U.P. in Smoke Celebrates 20 Years of BBQ

1. As U.P. in Smoke celebrates its 20th anniversary, Dustin and Dawn Wilcox continue to embody family tradition with culinary delights. They have been featured on 9&10 News Inside the Kitchen.

Long before the food truck trend swept the nation, Dustin Wilcox embarked on a journey from Clarksville to Cedarville that ignited a passion for barbecue and food trailers. Dustin’s 2002 move to the Eastern Upper Peninsula marked a change in scenery and a leap of faith into the world of culinary delights on wheels. After he met Dawn, they launched U.P. in Smoke BBQ in 2004 with a humble tow-behind rotisserie and a tent equipped with steam tables. Two years later, Dustin transformed a 1970s food trailer, a relic from his grandpa's era, into the iconic white trailer that serves as the heart and soul of U.P. in Smoke today.

In the early years, the BBQ duo competed in Taste of Grand Rapids Barbeque Competition regulated by the Kansas City Barbeque Society. Out of 61 teams in the pork category, the Wilcox’s pulled pork recipe took third place – and they’re still serving their award-winning recipe today.

Dustin’s passion for food trailers was instilled by his grandpa, Carlton Wilcox, at a young age. He spent childhood summers alongside his grandpa, traveling in elephant ear trailers and immersing himself in the world of food and flavor. He developed a love for BBQ, inspired by the pig roasts and BBQs hosted by his dad and uncles.

Crafted with love and ingenuity, the smoker adorning the front of the trailer was hand-built by Dustin and his uncles, embodying family tradition and craftsmanship. In 2014, Dustin built a red food trailer, which is stationed at Tahquamenon Falls Brewery from June to October. The couple used to camp in Paradise and eventually bought property and built a cabin to serve as their seasonal home.

“The owner of the brewery asked us to help serve the overflow of tourists,” Dawn remarks proudly. “Our relationship with the brewery is like family.”

At the heart of U.P. in Smoke's menu lies their signature dish – the hobo fries. Freshly cut fries topped with succulent pulled pork and cheese, this dish is a testament to Dustin's childhood memories of hobo baked potatoes. Complementing this popular item are hobo nachos, brisket fries and nachos and barbequed chicken.

Hand-built with care and craftsmanship by Dustin, the vibrant red trailer and smoker infuses each dish with rich flavors of tradition and dedication. U.P. in Smoke’s signature dish, hobo fries, brings a taste of nostalgia to customers at Tahquamenon Falls Brewery.

While the red trailer stays at Tahquamenon Falls Brewery, the white trailer is used at various events across the Eastern Upper Peninsula, including the Chippewa County Fair and Cedarville 4th of July festivities. At select events, patrons are treated to the nostalgic delight of elephant ears.

As U.P. in Smoke BBQ celebrates its 20th anniversary, Dustin and Dawn continue to embody the spirit of passion, perseverance and community that has fueled their journey. With every bite, patrons savor not just the smoky flavors but also the tapestry of memories and traditions woven into every dish.
